Almond Date Energy Bars

I don’t eat a lot energy bars these days.  Cliff bars, Powerbars, Mojo Bars, Luna bars – some are tastier than others, but most are loaded with preservatives and sugar.  Also, let’s face it, I’m usually not working out hard enough to justify a 300-calorie recovery “snack.”

That said, if I’m traveling and need to grab an easy breakfast (one that isn’t a sweet Starbucks muffin or giant carby NY bagel), I’ll usually opt for a Larabar, which are mostly just nuts and fruit.  So when preparing for a week-long vacation with my family, I wanted to pack an emergency stash of healthy, natural grab-and-go energy bars to keep us going on bike rides, beach walks and kayak outings.

How to Defrost a Wedding Cake

Friends said it couldn’t be done.  They said, “Get a back-up cake just in case…”  We heard horror stories of buttercream frosting falling off in clumps, cake that tastes like cardboard, and bone-dry cake.

Determined to eat and enjoy our wedding cake top on our one-year anniversary, I Googled methods for defrosting the cake after a year of deep freeze, and not surprisingly, I found several different “fool-proof” methods.

I personally think it’s all in how you wrap it on your wedding day.  To my bride-to-be friends, think about assigning this task to a bridesmaid or nice aunt!  Here’s what worked for us.

Good Morning Muffins

Actually, they are blueberry grapefruit muffins.

But with oats, chia seeds and the unusual but delicious combo of blueberries and fresh-squeezed grapefruit juice, these make for a good morning indeed!

The mother of all cookies!

My husband is a peanut butter fanatic.  So when he requested that I make cookies for his office holiday party, he knew that he wanted them to be peanut butter – or a combo of PB and chocolate.

We brainstormed some ideas.  Peanut butter cookies with chocolate chips?  Hmm, more chocolate… Chocolate chip cookies with chocolate chips AND mini peanut butter cups?  Better….but I want to be able to taste the peanut butter as much as the chocolate.

Then I sent him a link to this.  PERFECT!!

Easy Wolfpack Cookies

To kick off the 2011 NCSU football season, I showed my school spirit with these beauties: Red Velvet Cookies with White Chocolate Chips!

Truth be told, I’m not a sports person, and I never have been.  No, I don’t have a favorite college basketball team (although I think I’m supposed to say NC State, I’ve never – ONCE – watched a game).  No, I’m not up to speed on the US Open Tennis Championship.  Sorry, dad, volleyball camp didn’t help me.  And don’t even ask about that co-ed softball team I joined because they didn’t have enough girls.

Peanut Butter Banana Muffins – And They’re Good For You!

Bananas are one of those staple items I buy whenever I go to the grocery store.  We eat them for snacks, blended into protein shakes and sliced into cereal.  If there are any extras that start to turn brown, I usually peel and freeze them for future smoothies and banana breads.

This time, I was looking for something a little different – a little healthier – and I found a recipe on one of my favorite food blogs, Joy the Baker.  This recipe comes from Cooking Light, and in addition to being light on the butter, it’s also got whole wheat flour (FIBER!), greek yogurt (PROTEIN!) and flax seeds (ANTIOXIDANTS & OMEGA-3!).

To balance out the healthy, these muffins have a good amount of peanut butter and dry roasted, salted peanuts for crunch.
