Spicy Sausage, Bean, and Kale Soup

I was not planning to blog this soup.

In fact, I didn’t have a plan at all.  I suggested soup for dinner….maybe sweet potato, black bean and sausage?  Charles said keep the sausage but lose the sweet potato…and don’t we have mushrooms?  So I just started throwing stuff into the pot, completely unaware that I was making my new ALL-TIME-FAVORITE SOUP!

As soon as I tasted it, I kicked myself for not taking pics along the way for the blog.  So you’ll have to just settle for pictures of the finished product.  Here are a few different angles for you to enjoy.

This soup is spicy, hearty and healthy.  Serve with a dollop of sour cream and a thick slice of crusty bread to sop up every last drop.

Spicy Sausage, Bean, and Kale Soup

  • Half pound of sausage (we used local mild sausage)
  • 1 small onion, diced
  • 2 large portobella mushrooms, chopped
  • 1 large can of Rotel diced tomatoes and green chilis
  • 1 regular can of cannellini beans, drained and rinsed
  • 5-6 cups of stock, chicken or veggie
  • 2 generous cups of kale
  • Red pepper flakes
  • Granulated garlic
  • Celery salt
  • Oregano
  • Salt/pepper
  • Red wine vinegar
  1. Cook and crumble sausage in a large dutch oven.  Depending on the type of sausage, you may want to drain off some of the fat, but our local sausage didn’t render too much fat.
  2. Add onions to the pot and cook until starting to turn translucent.  Then add in mushrooms.
  3. At this point you will want to season.  I started with a generous pinch of red pepper flakes and a few dashes each of garlic, celery salt and oregano.
  4. Add in your canned tomatoes, including all the juice, and your beans.
  5. Add stock and bring to a simmer.  Simmer for about 20 minutes.
  6. At this point, taste.  Add salt and pepper and adjust seasonings until you like it.
  7. Chop the kale into bite sized pieces and add to the soup.  Stir until kale is wilted into the soup and cook for an additional 10-15 minutes.
  8. Add a couple of dashes of vinegar at the end and serve with a dollop of sour cream!

    Yumm. I want some of that. I love soup weather.
    You should add a random picture to the bottom on each post so we can see your photography skills.
