Green Smoothies and Chia Seeds

This weekend we got together with friends to celebrate the holidays and some very exciting news!  Our hosts introduced us to the wonders of chia seeds!  These tiny seeds are packed with Omega-3, antioxidants, protein, fiber and calcium.  Our friends claimed that they also kept them feeling full and gave them more energy during work-outs.  We were sold!

Another friend at the party shared her recipe for green smoothies, and after a night of delicious leg of lamb, roasted chicken, butter and bacon laden side dishes and tiramisu, we thought we’d test out both the smoothie recipe and the chia seeds for breakfast!

The “recipe” for a green smoothie is basically to take a handful or two of greens and blend them with water for 2-3 minutes, until there are no majorly huge chunks.  We used kale, but you could use spinach, swiss chard or any other dark, leafy green you have on hand.  We removed the bitter stems.

(I think I was trying out different settings on the new camera, which is why the color of my counter magically changes in the two pics above.  Photography class in two weeks!  Next up, gotta learn photo editing :))

Once you have your lovely green sludge, add in some banana and lemon juice.  Green smoothies can be whatever you want, but I think the banana and the lemon are pretty essential for sweetness, flavor and consistency!  We also threw in some of our chia seeds, frozen blueberries, frozen figs, a generous splash of almond milk and a squirt of agave nectar.  You could add whatever fruit you want!  You could also add nuts or nut butter.  Make it your own!

These were great and filling!!  AND – later at they gym I ran longer on the treadmill than I have ever run on a treadmill.  I believe it was the chia seeds!  (That and the fact that the Sex and the City movie was on E!)

Greens are everywhere during the cold winter months.  Stock up and incorporate some green smoothies into your life this holiday season to counteract the increase in butter and sugar that is inevitable!

    Really want to try this — I’m trying to get back into my workout routine. Need that long-lasting energy! Let us know if you have ideas for green juices with a juicer too…

      You can put kale through the juicer. Instead of bananas and berries for sweetness (I’m not sure they would go through a juicer very well), go for firmer fruits like apples, pears, carrots, beets, melon or pineapple. When I had a juicer, my favorite combos were apple-carrot-beet-kale and pineapple-cucumber-mint. Mix the chia seeds into your juice at the end and let sit for about 5-10 minutes. They will absorb some of the juice and thicken up the whole concoction!
