What Christmas Looked Like

Christmas for us consisted of lots of family, baking, traveling, cooking, hosting, photographing and, let’s not forget, eating!  Between three families and three big dinners (and breakfasts!), we took in enough gingerbread and cinnamon sugar to last us…at least…until the end of the year!

The mother of all cookies!

My husband is a peanut butter fanatic.  So when he requested that I make cookies for his office holiday party, he knew that he wanted them to be peanut butter – or a combo of PB and chocolate.

We brainstormed some ideas.  Peanut butter cookies with chocolate chips?  Hmm, more chocolate… Chocolate chip cookies with chocolate chips AND mini peanut butter cups?  Better….but I want to be able to taste the peanut butter as much as the chocolate.

Sweet Potato, Kale and Sausage Soup

MMMM this soup.

Sweet potato soup has been a winter staple in our house for a while now.  It can be thrown together pretty quickly, and I almost always have the ingredients on hand – sweet potatoes, onion, garlic, chicken or veggie stock.  Cook those things together on the stove until the potatoes are fork tender and puree with an immersion blender until silky smooth.  You’ll swear there is cream in there, but there isn’t!  Hearty, filling, feel-good food.

This is one of our favorite twists – the addition of smokey, salty sausage and kale, wilted into the soup in the last 20 minutes.

Green Smoothies and Chia Seeds

This weekend we got together with friends to celebrate the holidays and some very exciting news!  Our hosts introduced us to the wonders of chia seeds!  These tiny seeds are packed with Omega-3, antioxidants, protein, fiber and calcium.  Our friends claimed that they also kept them feeling full and gave them more energy during work-outs.  We were sold!

Another friend at the party shared her recipe for green smoothies, and after a night of delicious leg of lamb, roasted chicken, butter and bacon laden side dishes and tiramisu, we thought we’d test out both the smoothie recipe and the chia seeds for breakfast!

Evolution of the Fancy Apron

The Fancy Apron is back and better than ever!!

Over recent weeks/months, I’ve been trying to evolve my approach to cooking and eating in general – away from overly processed, quick fixes and empty calories to natural foods that fuel my body instead of weigh it down.  I’ve been inspired by people in my life who have taken their own steps towards a healthier lifestyle (yoga! juicing! vegan! – you know who you are).  I’ve been inspired by bloggers like Heidi at 101 Cookbooks and Emily at the Daily Garnish, both of whose recipes have me drooling and running to the kitchen!
